Why didn’t my filling thicken?

The filling thickens because the acid in fresh lime juice reacts with the sweetened condensed milk that’s what creates that creamy, set texture. If it didn’t firm up, a few things may have happened.
Make sure you use freshly squeezed lime juice. Bottled lime juice often isn’t as acidic and may not react the same way, which can prevent the mixture from thickening properly.
Don’t skip the chill time. The filling will start to thicken as you stir, but it needs at least 30 minutes in the refrigerator to fully set.
If needed, you can also whisk the mixture a bit longer before filling the shells to help it start thickening before chilling.
