2 Ingredient Cinnamon Apple Oat Pancakes are the epitome of a hearty breakfast on a chilly morning. They’re easy to make just like my 3 Ingredient Strawberry Flapjacks, and the bonus is that you’ll only need two easy-to-store pantry ingredients.

I like to serve them with warm apple pie filling, cinnamon and maple syrup so technically that would be 3 or 4 ingredients, but to me, those are toppers and don’t count. What does count is the absolutely scrumptious flavor you get from these versatile and unique apple pancakes themselves.

You won’t have to try hard to get these two ingredients together. You need a few packets of the instant apple cinnamon oatmeal and pancake mix that requires only water. That’s it my friend, 2 easy ingredients.

Instructions

I love this recipe because of its simplicity. You can make these easy hotcakes with one eye half open while the coffee brews.

  1. In a bowl, mix together 1 1/3 cup of pancake mix and add 2 packets of the apple cinnamon oatmeal.
  2. Add 1 1/3 cup of room-temperature water and mix well.
  3. Heat a skillet over medium-low heat and grease with butter or non-stick spray.
  4. Dollop about 1/4 cup of the batter for each pancake into the skillet. Cook them on one side until you see bubbles forming on top.
  5. Flip them and fry them on the other side until they are golden on both sides.
  6. That’s it! Transfer them to a warm plate and cover them with a clean towel to keep the heat in. Serve warm and toasty!

Warm the apple pie filling and dollop that over top the pancakes and sprinkle with some cinnamon to just reinforce that apple cinnamon vibe throughout the whole plate. You could even guild the lily as they say, and sprinkle some chopped walnuts and powdered sugar over top as well!

You’ll get about 8 decent-sized, filling, and hearty pancakes from this recipe so if you want more to freeze for on-the-go breakfasts, it’s easy to double the recipe. Spend the time making a whole batch to save yourself loads of time in the future!

Notes

Feel free to use your favorite pancake mix if you don't want to use the "just add water" variety. Simply prepare the batter according to the box and go ahead and add the oatmeal packets.

I love serving these pancakes with warm fruit pie filling, chopped walnuts or pecans, and warmed maple syrup.
Serving them with warm crispy bacon on the side is fantastic for the flavor profile game! Sweet, salty, crunchy, soft, and fluffy, - everything is there.

To batch-cook these apple pancakes, fry them up and let them cool completely on a rack. When cooled, stack them between pieces of parchment paper so they don't stick together. Freeze them for up to 3 months and pull out only the amount you want to use.

Throw them in the toaster, microwave, or air fryer to reheat and you're off to the races.
