Zesty, Easy and Delicious 2 Ingredient Ranch Carrots

Carrots are having a glow-up. Forget the plain steamed ones… we’re talking tender roasted carrots kissed with zesty ranch flavor that make any plate instantly better. With only a couple of ingredients, this easy side dish is proof that vegetables can be the fun part of dinner.
Despite what the kids say, they can.

I made these when I had a random packet of ranch in the cupboard and carrots that needed using up. Tossed them together and – boom! – Bob’s yer uncle.
And, btw, if you’re wondering why the carrots in my final photos are arranged in a fancy shingle pattern, that’s just because I had extra time on my hands. You definitely don’t need to do that.

- Carrots
- Ranch dressing (powdered packet)
- Oil
Eazy Note: Ingredients like common seasonings, oil, water, etc, don’t factor into the ingredient count because most people have those pantry items in their kitchen.
🔄 Swaps and Shortcuts
Carrots – Baby carrots, rainbow carrots, and even canned carrots work as a shortcut.
Oil – Use butter for a richer flavor
Onion – Add a bit of minced onion to the bowl with the carrots for more depth of flavor.
Helpful Tip: If you decide to use canned carrots, drain them very well and pat them dry before seasoning. The water could make the seasoning pool at the bottom, and then you have bland carrots. Boooo.

I love that the flavor from the ranch seasoning, as well as the flavors from the carrots go with pretty much anything you want to serve them with as a side like my Cranberry Stuffed Pork Loin Roast and my 4 Ingredient Turkey Meatloaf is dynamite with these carrots!
Yes! Baby carrots work great for roasted ranch carrots. Just add a few extra minutes of roasting time since they’re thicker.
Either works. If you use bottled ranch dressing, toss it directly with the carrots and skip the oil/butter. If you’re using the dry ranch mix, coat the carrots with the oil first, then sprinkle the ranch powder and toss, then bake.
See? Side dishes don’t have to be boring (or complicated). These roasted ranch carrots prove that a little bit of pantry seasoning and a hot oven can turn humble carrots into something crave-worthy.

2 Ingredient Ranch Carrots Recipe

Ingredients
- 1 lb carrots, peeled and sliced into sticks or coins
- 2 tbsp ranch powdered dressing
- 1 tbsp oil (olive or neutral)
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment.
- Toss carrots with oil and ranch seasoning until evenly coated.
- Spread out in a single layer on the sheet pan.
- Roast 20 - 25 minutes, flipping halfway, until tender and golden on the edges.
Notes
Don't be afraid of any browned edges. That means caramelization, and it adds so much incredible flavor.
I typically just toss the cooked carrots into a bowl and serve, but if you're feeling fancy (and you have the time), arranging them shingled on a plate with some parsely is fun ... but TOTALLY optional!
Storage: Keep leftovers in the fridge up to 4 days. Reheat in the oven or microwave.
