3 Ingredient Cream Cheese Dill Dip

I like this cream cheese dill dip because it has everything you want in a quick snack or a spread that goes with, well, almost anything.

It’s creamy, herby, and has a little tangy kick from that pickle brine. (If you know me, you know my love of salty, tangy pickles!). This cream cheese dill dip is quick, easy, and packed with flavor! A creamy mix of basic, easy-to-find ingredients, it’s perfect for veggies, crackers, sandwiches, or even as a sauce for fish tacos. Make it in minutes and watch it disappear!

Ingredients

  • 16 ounces Cream cheese, plain
  • 2-3 tablespoons pickle brine
  • 3 sprigs of dill
  • 1/3 teaspoon each of garlic, chili pepper, black pepper and oregano.
  • Salt and pepper to taste.

Instructions

  1. In a bowl, combine the spices and pickle brine. Mix well until incorporated using a whisk, or a hand beater.
  2. Remove the dill fronds (leaves) from the stem. Cut any long fronds of dill. (see notes)
  3. Transfer the dill into the bowl with the cheese and mix until evenly distributed. Taste the spread. Adjust for salt and pepper if necessary.
  4. Place the dip in a serving bowl and leave in the refrigerator for 1 hour. Serve the dill cream cheese dip with vegetables and crackers.

Notes

Take the cheese out of the refrigerator 1 hour before making the dip to soften and make mixing easier.

Feel free to use the more tender stems of the fresh dill. Just mince them as small as possible to incorporate with the cream cheese.

VARIATIONS:

1. Sprinkle the dill cream cheese on a bagel and sprinkle with sesame seeds, or chopped nuts for a richer flavor.

2. Substitute half of the dill for parsley or spring onions for a different version of the dish.

STORING: Store in an airtight container in the refrigerator for about a week. Some liquid may form during storage, drain or mix with the rest of the mixture.1
