✅ Large Wheat Tortillas – Pick thin, sturdy, flexible flour tortillas. If they feel stiff cold out of the package, zap them for 5 seconds to soften them up so they don’t split open when you roll.
✅  Fresh Eggs – Whisked with a splash of milk for maximum fluffiness. Fresh eggs make a huge difference in texture once thawed!
✅  Bacon – I like to choose meaty bacon (so not thin cut). Fry it up extra crispy so it maintains that smoky crunch inside the burrito.
✅  Bell Pepper –  I like to give them a small dice. No one likes big chunks of peppers in their burritos. If your peppers are super juicy, sauté them for a minute to get rid of excess water (wet veggies are the enemy of freezer prep!).

  • 6 large wheat tortillas
  • 12 large eggs
  • 15–18 strips bacon (2–3 per burrito)
  • 1 bell pepper, finely diced
  • 15 oz. cheddar cheese, grated
  • ¼–⅓ cup milk (optional)
  • 9 sprigs fresh parsley, finely chopped (or ~2 tbsp chopped)
  • Salt and black pepper to taste

Instructions

  1. Fry bacon in batches over medium heat, 5–7 minutes, until crispy. Drain on paper towels, let cool, and chop into small pieces.
  2. Whisk eggs with salt, pepper, and milk. Cook in a large skillet (or in batches) over low-medium heat, stirring softly until creamy and just set. Remove from heat and let cool for 5–7 minutes.
