Okay, hear me out, pumpkin bars made from chocolate chip cookie mix? I know, it sounds illegal, but it works. These bars are soft, cozy, perfectly pumpkin-y, and ridiculously easy. Like, 4 ingredients easy (if you want the optional drizzle!). I literally saw this on TikTok, blinked twice, and suddenly I was in the kitchen making them.

They’re that kind of dessert that feels fancy but takes less time than scrolling through your FYP. Perfect for fall parties, after-school snacks, or, you know… “testing” one straight from the pan while pretending to cut even squares (Oh come on, we’ve all done it)!

🛒 Ingredient Notes

Ingredients for pumpkin bars. Powdered sugar, milk, pure pumpkin puree, and chocolate chip cookie mix.

✅ Chocolate Chip Cookie Mix– Any brand works. (It’s the lazy baker’s secret weapon)
✅ Pure Pumpkin – Not pumpkin pie filling! Just the good ol’ orange puree.
OPTIONAL INGREDIENTS:
✅ Powdered Sugar – For that light dusting of sugar snow moment and/or it makes the other half of the luscious glaze to drizzle over top the bars.
✅ Milk – Makes the glaze smooth and glossy. If you wanna get wild, use heavy cream instead.

🎃 How To Make These Bars

  1. Dump the cookie mix and pumpkin puree into a bowl. Mix it like your life depends on it…just kidding!
  2. Spread that thick, glorious batter into a greased 9×9 pan.
  3. Bake for 22–25 minutes, just enough time to vibe to a fall playlist and light your “Pumpkin Patch Dreams” candle.
  4. Cool completely (I know it’s hard, but you’ll thank me later).
  5. Whisk the powdered sugar and milk together for the glaze, then drizzle it like you’re on a baking show.
  6. Cut into bars. Eat one. Stare at it. Eat another.

Pumpkin Pie Filling Is A Bad Idea Here

The reason why I wouldn’t use pumpkin pie filling is because the prepared filling already has quite a bit of sugar in it. The spiced included in the filling would be divine to have added to the bars, but the added sugar with the sugar from the cookie mix would make them very sweet. (Let’s not even talk about adding the glaze!! OOooweee that makes my teeth hurt just thinking about it!)

The glaze on top is optional, so if you want to use the filling and the cookie mix, I’d say go ahead but skip the glaze/drizzle.

💡 Tips for These Chocolate Chip Pumpkin Bars

  • Let the bars cool all the way before adding the glaze, unless you like melted icing.
  • Wanna level up? Toss in a handful of white chocolate chips or chopped pecans. I like the idea of the chopped nuts because they’ll be a nice contrast to the sweetness.
  • Store them in an airtight container for up to 3 days at room temp. They will stay soft and dreamy!

  • 1 (15 oz) can pure pumpkin
  • ¼ cup powdered sugar
  • 1 tbsp milk

Instructions

  1. In a medium bowl, combine cookie mix and pumpkin puree. Mix until smooth.
  2. Pour into a greased 9x9 baking pan.
  3. Bake at 350°F for 22–25 minutes.
  4. Let cool completely.
  5. Whisk powdered sugar and milk until smooth.
  6. Drizzle glaze over cooled bars, slice, and serve.

Notes

  • Best eaten within 3 days (if they even last that long).
  • For extra texture, add chopped nuts or a sprinkle of cinnamon sugar before baking.
  • Keep them covered to stay soft and fudgy.
  • Want to freeze them? No prob! I like to put the bars in a freezer friendly container, separated with parchment paper so it's super easy to grab 1 or 5, depending on the day you've had. They'll stay great snuggled in the freezer for up to 3 months. Thaw at room temp or in the fridge overnight.
