Ingredients for these Leftover Chili Burritos
Chili – The star of the show is the chili, which you can make using my simple 3-ingredient recipe. This chili is hearty, flavorful, and the perfect filling for your burritos. It’s a great way to use up any leftovers, turning them into a completely new meal.
Refried Beans – A layer of refried beans adds creaminess and depth to the burrito. They’re not just a filler; they’re packed with flavor and make the burrito more substantial. Plus, they’re a great source of protein and fiber.
Seasoned Rice – For convenience and ease, I used pre-made Mexican rice found in pouches at the grocery store. It’s seasoned just right and saves you the hassle of making rice from scratch, making this burrito even easier to assemble.
Tortillas – A good, soft tortilla is essential for wrapping up all the delicious fillings. You can use flour or corn tortillas, depending on your preference. Just make sure they’re large enough to hold everything together.
Optional Add-ons – Feel free to add shredded cheddar cheese for a melty, cheesy element and diced avocado (or guacamole) for a fresh, creamy texture. These add-ons enhance the flavors and add a nice contrast to the warm ingredients.
How to Make These Easy Chili Burritos
- Spread the refried beans evenly on the tortilla.
- Add a layer of Mexican rice over the beans.
- Dollop your leftover chili on top of the rice.
- If desired, sprinkle some shredded cheese and add diced avocado on top.
- Carefully wrap up the burrito.
- To warm, heat the burrito in the microwave for 30 seconds or in a hot pan on both sides to give the tortilla a nice texture.

How to Serve These 4 Ingredient Leftover Chili Burritos
These burritos are a meal on their own but can be paired with a variety of sides for a fuller lunch or dinner.
Consider serving with tortilla chips, salsa, a simple salad, or some Mexican-style corn. They’re versatile and go well with just about anything.
Tips and Variations to this Leftover Chili Burrito Recipe
- Add in some jalapeños or hot sauce if you like it spicy.
- Swap refried beans with black beans or a bean salad for a different texture, higher protein and fiber.
- Include some sautéed vegetables like bell peppers or onions for extra nutrients and flavor.
- If cheese is your thing, try different types like pepper jack or queso fresco.
- To swap up the rice, try using quinoa cooked in seasoned chicken broth.
Storage and Freezing
Leftover Chili Burritos can last in the fridge for up to 3 days. Wrap tightly in plastic wrap and reheat in the microwave with the plastic wrap removed and paper towel around the burrito to keep it from drying out.
Alternatively, try air frying it to reheat it.
For freezing, wrap the burritos in parchment paper then in foil, and they’ll be good for up to 3 months. Thaw overnight in the fridge and reheat in the microwave, removing the foil but keeping the parchment on for an easy on-the-go meal.
On the Go
These burritos are perfect for eating on the run. The parchment and foil wrapping make them easy to transport and reheat, whether you’re at school, the office, or out and about. (Just remember to remove the foil wrapping before heating them in the microwave.).

Notes
The amounts called for to place in each burrito will depend on what you have leftover for ingredients, and how much you enjoy the flavor of those listed ingredients. For instance, if you really like the flavor of refried beans, feel free to add more refried beans and less rice. Maybe add less of each ingredient and more wraps to make more burritos, etc.
