I love anything lemon flavored, as you can tell by 2 Ingredient Lemon Bars, 4 Ingredient Lemon Cranberry Cookies, and my 4 Ingredient Lemon Curd recipes, so, of course, I’d love these as well because they have that fresh, light, lemony flavor that we both love, they’re sweet, but not cloyingly so, and I really like the coating in coconut that they have.
Also, yes, did I mention they are only 4 ingredients to make? So honestly, I like to make these on a Sunday afternoon and they sit in the fridge all week for what I like to call “fridge snacks”. You know, when you’re standing there deciding what other sweet thing you’d like to have, these lemon bliss balls fit the bill.
A Few Things You’ll Need To Make Them
Another great thing about this recipe is that just like my 4 ingredient Tropical Bliss Balls recipe, the ingredients aren’t hard to find in the store.
The base is made from nuts, cashews to be specific. We use cashews because they’re a nice, light-flavored nut that allows the lemon to come through while adding a tiny bit of that classic nuttiness.
Grab a few fresh lemons (not bottled lemon juice, it won’t be as nice), some sweetened shredded coconut, and honey.

How It All Comes Together
Here are your step-by-step instructions to make this 4 ingredient lemon bliss balls recipe.
STEP 1: Zest and Juice- Zest the outside of the lemon first, then juice it. You will need 1-2 tablespoons.
STEP 2: Combine – Add your cashews, lemon zest and juice, honey, and shredded coconut in a processor. Process until a paste forms that’s suitable for forming into balls.

STEP 4: Roll In Coconut – Roll the energy balls in the coconut to coat them well. Chill for 30 minutes or more before serving to set.
Storing Your Zesty Lemon Delights
I like to store these lemon energy balls in the fridge, covered in a container, for a few reasons. First and most importantly, I think lemon flavors that are chilled are absolutely divine. Kind of like lemonade, you know? Delicious!
Secondly, the fridge can dry out the balls, making them not so blissful. Keeping them covered will help prevent that, and the same goes for freezing. Use a freezer-friendly container to store them for up to 3 months.

4 Ingredient Lemon Bliss Balls
These 4-ingredient lemon bliss balls are the perfect balance of tangy and sweet, with a refreshing burst of citrus in every bite. The creamy cashews and honey add natural sweetness, while shredded coconut brings texture and an extra tropical touch.
Ingredients
- 1/2 cup cashews
- ½ cup shredded coconut + 3 tbsp. for dipping
- 1 lemon
- 2 tablespoons of honey.
Instructions
PREP STEP: Scald the lemon with boiling water and pat dry. Zest the lemon, careful to only use the yellow portion and not the pith underneath. Then juice the lemon, you will need 1-2 tablespoons.
1. Place the 1/2 cup coconut shreds, cashews, honey, 1 tbsp. lemon juice and all the lemon zest in a food processor. Process all the ingredients until smooth.
2. The dough in the bowl should be a perfect texture for forming the balls. If the mixture is too sticky, you can add shredded coconut, almond flour or even protein powder. If it is dry, use a bit more lemon juice or water.
3 Place the remaining shredded coconut in a shallow dish. Form balls about 1- 1 ½ inches in diameter and roll them in the coconut. Chill the balls for 30 minutes in the refrigerator before serving.
Notes
Regarding the cashews. I've used both roasted and salted, and raw cashews for this recipe and I prefer the roasted and salted because the tiny bit of salt helps accentuate the sweetness in the cashews and of course, roasting the nuts brings out their flavor. However, both raw or roasted are delicious in this recipe.
I like to use sweetened coconut for this recipe, but the choice is yours. It helps sweeten up the recipe just a little bit more without adding more honey.
