They’re ultra delicious, pack in that classic Biscoff flavor, and are actually hard to get wrong.

Ingredients For the 3 Ingredient Biscoff Balls Recipe

  • Biscoff Cookies: You’ll need some classic Biscoff biscuits to make the balls, and also to coat the balls and give them that nice texture on the outside. 
  • Biscoff Cookie Spread: Biscoff spread adds that extra buttery, caramel-y deliciousness to the truffles. 
  • Milk Chocolate Chips: I used classic milk chocolate chips to bind everything together and to help the Biscoff balls hold their shape.

How to Make this Biscoff Truffle Recipe

STEP ONE: Process the Biscoff biscuits.
STEP TWO: Melt chocolate and combine with the Biscoff spread and crushed biscuits. 
STEP THREE: Shape the mixture into rounds and place on a lined baking sheet. Refrigerate to firm up.
STEP FOUR: Roll into crushed Biscoff biscuits to coat the balls nicely. 
STEP FIVE: Drizzle melted chocolate, refrigerate and serve.

Tips & Variations for this Homemade Truffle Recipe 

  • To get the perfect sized Biscoff balls, I would recommend using a melon scooper or even just 2 teaspoons to portion out the mixture and then using the palms of your hands to roll the balls. 
  • To help the Biscoff ball mixture cool down quickly, you can pop it in the freezer too! 
  • You can also choose to coat the balls in some melted chocolate and then refrigerate them to get that nice coating on the outside. 
  • To get a more intense chocolate flavor that works well with the flavors of Biscoff, you could use dark chocolate chips instead of the regular milk chocolate chips that I used. 
  • You could also make a variation of this recipe by mixing some Biscoff spread with melted white chocolate and using the mixture to coat the Biscoff balls. 
  • If you don’t have chocolate chips that the recipe calls for, you could use any regular cooking chocolate of your choice. 
  • Room temperature cream cheese can also be a great alternative to the melted chocolate in this recipe. Just remember to taste the truffle ball mixture before you make it into rounds- you might need to add some powdered sugar into the mixture if you’re using cream cheese.

How to Serve the Biscoff Cookie Balls

I love making these 3 ingredient Biscoff balls for any occasion, but especially for the holidays. I usually team them up for dessert trays with my other sweet treats like my 4 ingredient Nutter Butter candy bark (depending on the holiday), my 2 ingredient Rolo pretzel bites, and my 5 Ingredient White Chocolate Christmas Crack. 

Storage Ideas & Suggestions

Storing: These are best served fresh but if you have any leftovers, you can refrigerate them for 2-3 days, in an airtight container.  
Freezing: Place them in an airtight, freezer-friendly container, and they’ll keep for up to 3 months.
Thawing: The best way to thaw these delicious cookie truffles is to keep them in the fridge overnight to thaw.

3 Ingredient Biscoff Cookies have that distinct biscoff flavor along with hints of chocolate. They're not only incredibly delicious, they're so darn easy to make!

Ingredients

  • 12 biscoff cookies
  • 3 tbsp biscoff spread
  • 100g milk chocolate chips (Plus extra chocolate for drizzling later)
  • 6 crumbled Biscoff cookies, for decoration

Instructions

1. In a food processor, process the cookies to look like sand. Only use the 12 cookies as the other reserved cookies are for coating the truffle balls.

2. Melt the chocolate chips in a double boiler or microwave until melted and smooth.

3. In a bowl, mix together the biscoff spread, processed cookie crumbs, and melted chocolate. The mixture should be thick.

4. Chill for about 20 minutes.

5. With a cookie scoop, spoon out portions of the truffle dough and lightly roll into balls. Roll them in the cookie crumbs and place them on a parchment-lined tray.

6. Chill the truffle balls again for 15-20 minutes. When serving, melt the reserved chocolate to drizzle over the truffle balls and drizzle it over the biscoff truffles and serve!

Notes

If the cookie dough is sticking to your hands, it's a great tip to wet your hands to form the balls so the dough doesn't stick.
