Okay, can we just take a second? This 4 Ingredient Chicken Salad is my current hyper-fixation.

Yes, it might seem basic. But let me tell you, it’s ALL the things. It is crunchy. It is creamy. And most importantly? It requires ZERO actual cooking if you play your cards right. We’re talking rotisserie chicken vibes, people! It’s the perfect “I’m a busy human but I still want to eat like a queen (or king, no judgement here!)” lunch.

🛒Ingredient Notes

Cooked Chicken – Grab a rotisserie chicken and shred it while it’s warm. Leftover grilled chicken or un-breaded strips work perfectly too!
Celery Stalks – For that CRUNCH. Make sure they’re nice and juicy.
Red Grapes – I used red because they look so much prettier in photos (priorities!), but green works if that’s what you’ve got.
Mayonnaise – Use your favorite brand. This is the glue holding our lives and this salad together.
Salt and Pepper – To taste, as much (or as little) that your heart desires.
✅Optional add-ons – Toss in some fresh dill, a splash of tangy pickle juice, or some diced red onion.

Eazy Note: Ingredients like common seasonings (salt, pepper, garlic powder, etc), oil, water, don’t factor into the ingredient count because most people have those pantry items in their kitchen.

👩‍🍳How To Make 4 Ingredient Chicken Salad

  1. First, get those veggies prepped and your chicken shredded into bite-sized pieces.
  2. Toss everything into a big bowl and add enough mayo to make it perfectly creamy.
  3. Give it a good stir and season it until it tastes just right.
  4. Let it hang out in the fridge for a bit to get nice and cold before you dive in!

Eazy’s Pro Moves (Don’t Skip These!)

If you aren’t using a croissant, try a toasted brioche bun or No-Knead Bread for that “I actually cook” flex. Add toasted pecans for more life-changing crunch, because that’s what I like!

The mix feeling too heavy? A squeeze of lemon juice fixes everything. 

Serving Tips and Variations

I’m currently obsessing over how good this looks on a croissant-bagel, but you can also serve it:

  • Scooped into big lettuce leaves for a fresh crunch for low carb style.
  • Served in a bowl with a side of salty cracker as a dip or alongside my 2-Ingredient Ranch Dip
  • Toss the salad with some chilled pasta for a vibe similar to my Greek Pasta Salad.
  • Try diced pineapple instead of grapes for a sweet twist!

Storage

4 Ingredient Chicken Salad (The "I Have No Time" Special!)

Rest Time: 30 minutes
Total Time: 45 minutes

A creamy, crunchy, and slightly sweet chicken salad made with just 4 main ingredients. Perfect for meal prep, croissants, or lettuce wraps.

Ingredients

  • 10 oz Cooked Chicken (Rotisserie or leftovers), shredded
  • 3 oz Celery stalks, diced
  • 3.5 oz Red grapes, halved
  • 2/3 cup Mayonnaise
  • Salt & Pepper to taste
  • Croissants or lettuce for serving

Instructions

    1.  Rinse celery and pat dry; cut into small cubes.

    2.  Shred or cube your cooked chicken.

    3.  Remove grapes from vines and cut in half.

    4.  In a large bowl, combine chicken, celery, and grapes.

    5.  Add mayonnaise and mix well. Season with salt and pepper.

    6.  Refrigerate for at least 30 minutes.

    7.  Serve on your favorite bread or lettuce wrap and enjoy!

Notes

  • Shred your rotisserie chicken while it's still warm! It absorbs the mayo much better, making the final result way creamier.
  • Make sure your celery and grapes are bone-dry after washing. Any extra water will turn your creamy salad into a soggy mess in the fridge.
  • If you aren't a fan of grapes, swap them for diced apples to keep that sweet crunch without the "fruit burst" texture.
  • Keep the salad and your bread/croissants in separate containers until the exact moment you're ready to eat so nothing gets soggy.
