4 Ingredient Stove Top Stuffing Chicken Meatloaf Recipe

If you’ve been hanging around here a bit on this blog, you’ll know all about my obesission with Stove Top Stuffing, and well my fantastic friend, this Chicken Meatloaf Recipe made with boxed stuffin is just another awesom recipe to add to the list.

Just like my Stove Top Stuffing Turkey Meatloaf recipe, this one is made with ground chicken and is also a minimal ingredient recipe… only 4 ingredients to make this meaty loaf! Sigh… you gotta know I love simplicity!

Ingredients Needed

The ingredients you’ll need are super simple. Same as my regular stove top meatloaf (with ground beef) we need only the basics.

Ingredients for the 4-ingredient chicken meatloaf. Chicken, stuffing mix, bbq sauce and eggs.
  • Ground Chicken – I like a mix of ground dark meat as well as light meat when buying ground chicken because all light meat (chicken breast) is not only pricey but can be a bit dry. .. well,, really dry if overcooked. Most ground chicken that you get at the grocers is a mix of both which is great. That being said, if you want to really sock in that chicken flavor with a fantastic juiciness, get your cute hiney on over to your local butcher and ask him nicely for all dark meat ground chicken.
  • Stove Top Stuffing – No need to use the brand name, I only use it because it’s super easy to find at my store, and it’s recognizable. If you have a store brand that you prefer more, by all means, you should use it. Stove Top puts out different flavored stuffing mixes, so you’d want to use a stuffing mix flavored for chicken meat.
  • Eggs – We need a binder to keep the meat and stuffing together.
  • BBQ Sauce – Again, use your favorite! I like to use a sweeter one (Sweet baby ray’s) or other times, I’ll use a savory, more spicy one. It all depends on my mood that day (or.. if I’m honest, what I have open in the fridge).

One thing I love about making this chicken meatloaf recipe (or, well, pretty much any meatloaf recipe) is that it’s an all in one bowl kinda venture. No need to slice and dice and use up a boatload of other bowls. One bowl, one mixing spoon, and you’re baking pan!

Plus… this recipe is super versatile in terms of flavor. Every time you make this dinner recipe, could switch things so it’s a new meatloaf every time. The stuffing mix is does most of the heavy lifting here because it’s already seasoned, so changing the flavor of the stuffing or BBQ sauce can give you a completely different meatloaf without adding a bunch of extra ingredients.

A smoky BBQ sauce will obviously take it one direction, while something sweeter gives you that sticky, almost candy-like glaze once it hits the broiler.

Cooking Tips For The Meatloaf

If you want a few tips on making the loaf, here are a few.

I find that it’s important to be careful not to over work the chicken when mixing it in with the stuffing. Overworked ground meat can get tough when mixed and mixed and mixed, so you want to combine everything just enough to get it to hold together.

Try not to pack it down too much in the loaf pan. Ground chicken makes it somewhat difficult to keep it loose and airy because its a softer grind thatn ground beef.. I just meant don’t pack it in there like you’re packing a carry on suitcase for a 2 week trip!

Speaking of loaf pans, don’t panic if you don’t have a loaf pan at all. You can use a sheet pan covered in tin foil and then simply shape the chicken loaf in the “meatloaf shape”. It works great.

Also, keep a close eye on the sauce while broiling. If your BBQ sauce is on the sweeter side, all that sugar can go from beautifully caramelized to burnt surprisingly fast under the broiler.

Stay close and watch for the sauce to start bubbling, darkening around the edges and getting nice and sticky. Once it does, pull it out… this is definitely not the time to wander off and unload the dishwasher! (Don’t ask me how I know…).

Lastly, when it comes out of the oven, give the meatloaf a little time to sit before you start slicing. About 10 minutes is plenty. Cutting into it immediately when it’s screaming hot makes it much more likely to crumble apart, especially with ground chicken.

Let it settle down a bit and you’ll get those nice, proper slices instead of BBQ chicken rubble. Still delicious… considerably less pretty.

4-Ingredient Stove Top Stuffing Chicken Meatloaf

This easy chicken meatloaf needs just four ingredients! Ground chicken, stuffing mix, eggs and BBQ sauce make a juicy, flavorful meatloaf finished with a sticky, caramelized BBQ topping.

Ingredients

  • 2 pounds ground chicken
  • 1 box (6 ounces/170 g) chicken-flavored Stove Top Stuffing Mix
  • 2 large eggs
  • 1 cup BBQ sauce, divided

Instructions

  1. Preheat the oven to 375°F. Lightly grease a standard 9 x 5-inch loaf pan or line it with parchment paper for easier removal.
  2. Add the ground chicken, dry stuffing mix, eggs and ½ cup of the BBQ sauce to a large bowl.
  3. Gently mix everything together just until the stuffing is evenly distributed and the mixture holds together. Try not to overmix the chicken.
  4. Transfer the mixture to the prepared loaf pan. Gently spread it into the corners and even out the top, but don't firmly pack or press the mixture down.
  5. Bake uncovered for approximately 40–50 minutes, or until the center of the meatloaf is approaching 165°F (74°C).
  6. Spread the remaining ½ cup BBQ sauce generously over the top of the meatloaf.
  7. Turn the oven to broil and broil for approximately 2–4 minutes, watching it the entire time. Remove it when the sauce is bubbling, sticky and beginning to caramelize around the edges.
  8. Check the center of the meatloaf with an instant-read thermometer. It should reach at least 165°F (74°C).
  9. Let the meatloaf rest in the pan for about 10 minutes before removing and slicing.

Notes

Don't overwork the chicken: Ground chicken can become dense and tough if it's mixed too aggressively. Fold everything together only until the ingredients are evenly combined.

Don't pack the loaf pan: Ground chicken is naturally softer and stickier than ground beef, so you may be tempted to really press it into the pan. Resist! Gently shape and level it without compacting it.

Your pan can change the cooking time: A smaller loaf pan creates a taller meatloaf that may take longer to cook. A larger pan makes a shallower loaf that can cook faster. Use the cooking time as a guide and let the internal temperature tell you when it's actually done.

Use a thermometer: Insert an instant-read thermometer into the thickest part of the center of the loaf. Ground chicken should reach 165°F (74°C).

Watch that BBQ sauce under the broiler: Sweeter BBQ sauces contain plenty of sugar and can burn quickly. Once the sauce starts bubbling, darkening and becoming sticky around the edges, you're there. Don't walk away from it!

Let it rest: Give the finished meatloaf about 10 minutes before slicing. This gives everything a chance to settle and helps you get cleaner slices instead of having the loaf crumble apart.

Ground chicken: A mixture of light and dark meat works beautifully here. All-breast ground chicken is leaner and can produce a slightly drier meatloaf. If you can get ground dark-meat chicken from your butcher, it'll make an especially juicy loaf.

Stuffing mix: Stove Top isn't mandatory. Another brand of dry boxed chicken-flavored stuffing can be substituted. Use approximately 6 ounces/170 g so you're replacing the same amount.

BBQ sauce: Use whichever BBQ sauce you love. A sweet sauce gives you a stickier, more caramelized finish, while smoky, spicy or tangier sauces will completely change the personality of the meatloaf without adding another ingredient.

No loaf pan? Shape the mixture into a loaf on a parchment- or foil-lined rimmed baking sheet. Because more of the meatloaf is exposed to the heat, begin checking its internal temperature earlier. You also get more exposed surface for that BBQ sauce to caramelize on, which isn't exactly a hardship.

Storage & Reheating: Store leftover chicken meatloaf in an airtight container in the refrigerator for up to 3–4 days. Reheat individual slices gently in the microwave or cover and warm them in the oven. Adding a little extra BBQ sauce before reheating helps keep the meatloaf moist.

Freezing: Cool the cooked meatloaf completely, then wrap the whole loaf or individual slices well and freeze in an airtight container. Individual slices are especially handy because you can thaw only what you need.
